A passionate duo at the helm of La Muse Bouche

Fanny Cuillé-Liautaud and Christophe Liautaud warmly welcome you to their establishment.

Originally from Monaco, Fanny initially trained in cooking and pastry making before specialising in wines and spirits. She honed her skills in some of the most renowned wine estates in the south of France, Burgundy and the Rhône Valley.

Christophe trained as a chef in the Alpes-de-Haute-Provence region of southern France. From Nice, he embarked on a career path that was as eclectic as it was demanding. He earned his spurs working in Michelin-starred establishments, private yachts, lively brasseries and traditional Lyonnais restaurants, known locally as "les bouchons". Drawing on this extensive experience, he has crafted his own distinctive style of cuisine, a cuisine that combines a sense of freedom, precision and vibrancy.

Having settled in the Jura region in 2014, Fanny and Christophe first opened a restaurant in the village of Aumont before moving to the charming small town of Poligny in 2018. Here, they invested in an establishment that reflected their values and in which they could give free rein to their passion.

A cuisine of passion

At La Muse Bouche restaurant, the cuisine comes from the heart. It is conceived and created by Fanny and Christophe, two people in constant exchange. From an idea, desire, season or discovery, so a dish is born.

Instinctive and 100% home-cooked, chef Christophe Liautaud's cuisine showcases fresh produce, local wherever possible and always seasonal. Drawing on his Mediterranean roots, fish and seafood from the French coasts take centre stage. These sun-kissed dishes are enhanced with mouthwatering touches from the Jura region, such as wild garlic and local ricotta, adding a further splash of authenticity to this vibrant menu.

The chef relies on a number of high-quality partners including Les Jardins de l’Apprenti’Sage for the restaurant’s fruit and vegetables, Margain Marée for its fish and seafood, Maison Chazal for its meat and the Janin fromagerie (MOF) for its cheese.

In the dining room, conviviality reigns supreme with an atmosphere that reflects the generosity and sincerity of the dishes created by Christophe and his wife, Fanny. While the chef regularly puts in an appearance in the dining room to great guests, Fanny is ever on hand, providing a warm welcome to diners and tending to their every need. She takes a special delight in introducing you to the dishes, describing her husband's cuisine, or explaining a particular wine, ingredient or indeed, grape variety.

You will feel as if among friends. And Christophe and Fanny's daughter, Victoire also plays an active role in the life of the restaurant, presenting and serving the dishes to guests. More than just a meal, this is a unique experience to be shared: a moment for indulgence, largesse and conviviality.
